Dry Ingredients

  • 2 cups plus 6 tablespoons all-purpose flour, divided
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup powdered sugar
  • 1/4 cup granulated sugar

Wet Ingredients

  • 1 1/4 cups butter, softened
  • 1 1/2 teaspoons vanilla extract

Optional Decoration

  • Food coloring (green, yellow, purple, black)
  • Sprinkles (3 tablespoons of each color)

Instructions

  1. Mix dry ingredients: In a large mixing bowl, combine 2 cups of flour, baking powder, salt, powdered sugar, and granulated sugar. Mix briefly to distribute ingredients evenly.
  2. Add butter: Cut the softened butter into pieces and add to the dry mix. Mix until the mixture has a crumbly consistency, similar to cornmeal.
  3. Add vanilla and form dough: Stir in vanilla extract and mix just until a ball forms.
  4. Divide dough and add color: Divide dough into three 8-ounce balls. Add 2 tablespoons of flour and a chosen food coloring to each ball, knead gently to incorporate color and flour.
  5. Roll dough layers: Roll each colored dough ball between sheets of wax paper into rectangles about 11 x 8 1/2 inches.
  6. Layer dough: Peel off wax paper and layer the rolled dough rectangles on top of each other in your preferred color order, leaving wax paper on the bottom layer.
  7. Form jelly roll: Using the wax paper, roll the layered dough like a jelly roll to create a log shape.
  8. Chill dough: Refrigerate the dough log for 2 hours to firm up.
  9. Add sprinkles coating: Place sprinkles in a 9×13 pan and roll the chilled dough log in the sprinkles until fully coated.
  10. Preheat oven: Set oven to 325°F (163°C).
  11. Slice and bake: Slice the dough log into 1/4-inch-thick cookies and place on parchment-lined baking sheets.
  12. Bake cookies: Bake for 15 to 17 minutes until cookies are no longer shiny on top and the bottoms are golden brown.
  13. Cool and serve: Remove from oven and allow cookies to cool on the baking sheet before serving.

Notes

  • Use wax paper to make rolling and layering easier.
  • Add food coloring carefully to achieve vibrant colors without altering dough texture.
  • Chilling the dough log is essential for clean slicing and shape retention.
  • Ensure sprinkles are pressed evenly for full coverage on cookies.
  • Store cookies in an airtight container to maintain freshness.
