  • 120g dates
  • 60ml water
  • Pinch of salt

Oat Crumble

  • 55g ground oats
  • 45g rolled oats
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 2 tbsp coconut oil, melted
  • 2 tbsp almond butter

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (160°C fan assisted) or 350°F to prepare for baking the oat date cups.
  2. Prepare Date Paste: Add the dates, water, and a pinch of salt to a pan over low-medium heat. Mash the dates with the back of a wooden spoon as they soften, cooking until the mixture becomes a smooth, thick, and spreadable paste. Remove from heat and allow to cool.
  3. Mix Oat Crumble: In a bowl, combine ground oats, rolled oats, baking powder, salt, cinnamon, and cardamom. Add melted coconut oil and almond butter, stirring thoroughly until well combined into a crumbly mixture.
  4. Assemble Cups: Press half of the oat crumble mixture firmly into silicone cupcake or muffin molds—mini molds recommended to yield 8 servings. Spread the cooled date paste evenly over this base layer, then sprinkle the remaining oat crumble on top to cover.
  5. Bake: Place the molds in the preheated oven and bake for 20-25 minutes, or until the oat topping is golden and set.
  6. Cool and Serve: Remove from oven and let the cups cool completely. For the best flavor and texture, chill them before serving. Store in an airtight container in the fridge for up to 3-4 days.
