Instructions

  1. Make crust: Finely crush the Oreo cookies in a food processor. Add melted butter and blend until the mixture is evenly moistened.
  2. Press crust: Lightly grease the edges of a 9-inch springform pan with cooking spray. Press the crumb mixture firmly onto the bottom of the pan to form the crust.
  3. Freeze crust: Place the crust in the freezer to firm up while you prepare the filling.
  4. Prepare strawberry puree: Place 1 cup of fresh strawberries in a blender and pulse until pureed. Set aside.
  5. Mix cream cheese: In a medium bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
  6. Whip heavy cream: In a separate bowl, whip 2 cups heavy cream until soft peaks form. Add strawberry extract and continue whipping until stiff peaks form.
  7. Combine mixtures: Gently fold the cream cheese mixture into the whipped cream on low speed until just combined.
  8. Divide filling: Split the combined mixture evenly into two separate bowls.
  9. Create strawberry layer: To the first half, add the strawberry puree and a few drops of pink food coloring (if using). Mix gently on low speed to combine. Pour this over the chilled crust.
