Seasoning and Oil Mixture

  • 1/2 tsp garlic powder
  • 2 tsp rosemary
  • 1/2 tsp paprika

  • Fresh Parmesan cheese

Instructions

  1. Preheat the Oven: Set your oven to 400 degrees Fahrenheit to prepare for roasting the potatoes.
  2. Prepare Baking Sheets: Line one or two baking sheets with aluminum foil depending on the volume, and spray them with cooking spray such as Pam to prevent sticking.
  3. Simmer Potatoes: Fill a large pot with 1-2 quarts of water, add 1 teaspoon salt, and bring to a boil. Reduce to a simmer, then add peeled potatoes sliced about 1/2 inch thick. Cook for 3-4 minutes until slightly soft but still firm.
  4. Cool and Cut Hearts: Drain the potatoes and rinse with cold water to cool slightly. Use a small heart-shaped metal cookie cutter to cut as many hearts as possible from the slices. Reserve any scraps in water for optional mashed potatoes.
  5. Mix Seasoning: In a bowl, combine olive oil, salt, pepper, garlic powder, rosemary, and paprika, reserving Parmesan for garnish.
  6. Coat the Potatoes: Pour the seasoning mixture over the heart-shaped potatoes and gently stir to coat them evenly. Let them sit for about 5 minutes to absorb the flavors.
  7. Roast the Potatoes: Spread the potatoes evenly on the prepared baking sheets. Roast in the oven for 22-25 minutes, flipping them halfway through to ensure even cooking.
