Inspired by classic Greek flavors, it’s versatile and easy to prepare, served best chilled over greens, in pita pockets, or as a wrap filling.

Ingredients

Scale

For the Tzatziki Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber, excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

For the Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, garlic, dill, parsley, sea salt, and freshly ground black pepper. Stir thoroughly until all ingredients are well blended, creating a creamy and flavorful dressing.
  2. Combine the Salad Ingredients: Add the chopped or shredded cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese to the bowl with the dressing. Gently stir until everything is evenly coated with the tzatziki mixture.
  3. Adjust Seasoning and Serve: Taste the salad and adjust the lemon juice, salt, or pepper as desired for balance and brightness. Serve chilled over leafy greens, use as a filling in pita pockets or wraps, or enjoy in lettuce cups. Optionally, top with additional chopped tomatoes, kalamata olives, extra feta cheese, and fresh herbs for more texture and flavor.

Notes

  • To avoid a watery salad, make sure to squeeze out excess moisture from the grated cucumber before mixing with yogurt.
  • This salad can be prepared ahead of time and stored in the refrigerator for up to 3 days, allowing the flavors to meld beautifully.
  • Use leftover rotisserie or grilled chicken to save time on prep.
  • For a lower-fat option, consider using reduced-fat Greek yogurt and feta cheese.
  • Serve immediately after assembling for best texture, especially if using fresh herbs and diced vegetables.
