  • 1 lb baby potatoes
  • 4 ears corn, halved
  • 2 lemons (1 halved for the boil, 1 for squeezing at the end)

Boil Seasoning

  • ΒΌ cup Old Bay seasoning
  • 2 tbsp Cajun seasoning
  • 2 tbsp kosher salt
  • 1 tbsp garlic powder
  • 2–3 bay leaves
  • Optional: 1–2 beers or Β½ cup white wine for the boil

Spicy Garlic Butter Sauce

  • 1 stick (Β½ cup) unsalted butter
  • 6 garlic cloves, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp Old Bay seasoning
  • 1 tsp smoked paprika
  • Juice of Β½ lemon
  • Optional: 1 tsp hot sauce or red pepper flakes
  • Optional: chopped parsley for garnish

Instructions

  1. Start the Boil: Fill a large stockpot (8+ quarts) halfway with water. Add kosher salt, Old Bay seasoning, Cajun seasoning, bay leaves, garlic powder, and the halved lemon to the pot. Bring everything to a strong boil. If using, add 1–2 beers or Β½ cup white wine for extra flavor.
  2. Cook in Layers: Add baby potatoes first and boil for 10–12 minutes until partially cooked. Next, add the halved corn and sliced smoked sausage to the pot and boil for an additional 5 minutes. Then add crab legs and mussels or clams and boil for 5 more minutes. Lastly, add the shell-on shrimp and boil for 2–3 minutes until the shrimp turns pink and opaque. Drain all ingredients immediately to prevent overcooking.
  3. Make the Spicy Butter Sauce: While the seafood boil is cooking, melt unsalted butter in a small saucepan over medium heat. Add minced garlic, Cajun seasoning, Old Bay seasoning, smoked paprika, and lemon juice. Let the mixture simmer gently for about 2 minutes to marry the flavors. Stir in hot sauce or red pepper flakes if desired for added heat.
  4. Toss and Coat: Transfer the drained seafood, sausage, potatoes, and corn to a large mixing bowl or roasting pan. Drizzle the spicy garlic butter sauce over everything. Toss gently to coat all ingredients evenly with the sauce, or serve the sauce on the side for dipping.
