Ingredients

Scale

Main Ingredients

  • 1/2 lb ground beef
  • 13 oz tortilla chips
  • 16 oz salsa con queso (Mission brand)
  • 3 tomatoes, cubed
  • 2 large avocados, cubed
  • Green onion, chopped (about 2 tablespoons)
  • 8 oz refried beans
  • 12 teaspoons taco seasoning
  • Salt to taste
  • Black olives, sliced (optional, quantity to taste)

Instructions

  1. Prepare the Fresh Salsa: In a bowl, combine the cubed avocados, cubed tomatoes, and chopped green onion. Set this fresh salsa mixture aside to add as a topping later.
  2. Cook the Ground Beef: Place the ground beef in a skillet over medium heat. Season with 1 to 2 teaspoons of taco seasoning and a pinch of salt. Sauté the meat, breaking it apart with a spatula, until fully cooked through, about 5 minutes. Once done, remove from heat and set aside.
  3. Heat the Cheese Sauce: Pour the salsa con queso into a small pan and warm it over low heat for 3 to 5 minutes, stirring occasionally until the cheese sauce is hot and smooth. Keep warm on low heat.
  4. Warm the Refried Beans: In another pan, add the refried beans along with a few tablespoons of water to thin. Cook over medium heat until the beans begin to bubble and are heated through. Remove from heat and set aside.
  5. Warm the Tortilla Chips: Spread the tortilla chips evenly onto a baking sheet and place in a preheated oven at 400°F (204°C) for a few minutes to warm and slightly crisp them. Keep an eye to avoid burning.
  6. Assemble the Nachos: Remove the warmed chips from the oven and transfer to a serving platter. Evenly sprinkle the cooked ground beef over the chips. Spoon the warm refried beans on top, drizzle generously with the melted salsa con queso cheese sauce, and add spoonfuls of the fresh tomato and avocado salsa. Optionally, garnish with sliced black olives. Serve immediately while hot and enjoy your homemade nachos!

  • Customize with shredded cheddar or Monterey Jack cheese if desired.
  • Use fresh homemade taco seasoning for a more vibrant flavor.
  • To make preparation faster, use pre-cooked or leftover ground beef.
  • The recipe can be doubled easily for larger gatherings.
