Instructions

  1. Prepare the Marinade: In a medium mixing bowl, combine ½ cup teriyaki sauce with 1 tablespoon sesame oil. Stir well to blend the flavors. Reserve 2 tablespoons of this marinade for brushing later.
  2. Marinate Chicken: Add the 1½ pounds of chicken pieces to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 1 hour or up to 8 hours to allow the flavors to infuse the chicken thoroughly.
  3. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling. Preheat the grill to medium-high heat.
  4. Assemble Skewers: Thread the marinated chicken pieces onto the skewers, alternating with pieces of bell pepper and red onion to create a colorful and balanced skewer.
  5. Grill Skewers: Place the skewers on the preheated grill and cook for 10 to 12 minutes, turning every few minutes to ensure even cooking and a nice char. During the last few minutes of grilling, brush the skewers with the reserved marinade for extra flavor.
