Instructions

  1. Prepare the Chicken: If not using pre-cooked chicken, cook chicken breasts by boiling, baking, or grilling until fully cooked. Allow to cool, then shred or dice into bite-sized pieces for easier wrapping.
  2. Toss Chicken with Sweet Chili Sauce: In a medium bowl, combine the shredded chicken with sweet chili sauce, mixing thoroughly to ensure each piece is coated with the spicy-sweet glaze.
  3. Prepare the Vegetables: Wash and shred the lettuce or mixed greens. Shred the carrots, thinly slice cucumber and red onion. Slice the avocado just before assembling to prevent browning.
  4. Assemble the Wraps: Lay out each tortilla on a flat surface. Spread a thin layer of mayonnaise or Greek yogurt if using. Place a handful of greens in the center, followed by the sweet chili chicken, shredded carrots, cucumber, red onion, and avocado slices. Sprinkle with shredded cheese and chopped fresh cilantro. Drizzle with fresh lime juice and season with salt and pepper.
  5. Roll and Serve: Fold the sides of the tortilla inward and roll tightly from bottom to top ensuring ingredients stay enclosed. Slice in half if desired and serve immediately. Wrap in foil or plastic wrap to store for later.
