Mashed Potato Topping

Instructions

  1. Cook Potatoes: Peel and chop the Yukon Gold potatoes into even pieces. Place them in a saucepan and cover with cold water about an inch above the potatoes. Simmer on the stovetop until the potatoes become fork-tender, approximately 15 to 20 minutes. Drain the water thoroughly.
  2. Prepare Mashed Potatoes: Add butter, whipped cream cheese, 2 tablespoons of sour cream, and salt to the drained potatoes. Mash until smooth and creamy. Set the mashed potato mixture aside.
  3. Preheat Oven and Prepare Dough: Preheat a pizza stone in the oven at 500°F (260°C) to ensure a crispy crust. Shape the prepared dough into a large pizza circle and place it on a pizza peel or baking sheet. Lightly brush the dough surface with olive oil to help with crisping and flavor.
  4. Assemble the Pizza: Gently and evenly spread the mashed potato mixture over the pizza dough using a spatula or the back of a spoon. Sprinkle shredded cheddar cheese evenly over the mashed potatoes, adjusting the amount to your preference.
  5. Bake the Pizza: Transfer the pizza onto the preheated pizza stone in the oven. Bake for 10 to 14 minutes, or until the cheddar cheese is bubbly and starting to brown and the crust is cooked through and golden brown.
  6. Add Final Toppings and Serve: Remove the pizza from the oven and immediately top with the crumbled bacon and chopped fresh chives. Slice the pizza and serve it warm with additional sour cream on the side for dipping or topping.
