Tips & Variations
- Use Yukon Gold potatoes for a creamy texture, or try Russet potatoes for a fluffier mash.
- Substitute sour cream with Greek yogurt for a tangy twist.
- Add caramelized onions or sautéed mushrooms for extra flavor.
- If you prefer, use a premade pizza dough to save time.
Storage
Store any leftover pizza in an airtight container in the refrigerator for up to 2 days. Reheat in a preheated oven at 375 degrees Fahrenheit for about 8-10 minutes to maintain crispiness. Avoid microwaving to keep the crust from becoming soggy.

FAQs
Can I make the mashed potatoes ahead of time?
Yes, you can prepare the mashed potatoes a day in advance and store them in the refrigerator. Bring them back to room temperature before spreading on the dough to ensure even cooking.
Is it necessary to use a pizza stone?
While a pizza stone helps achieve a crispier crust, you can use a baking sheet if you don’t have one. Preheating the baking sheet in the oven will improve the crust’s texture.

Ingredients
Pizza Dough
- Dough for one large pizza (refer to recipe link in the post)
Mashed Potato Topping
- 5 small Yukon Gold potatoes
- 4 tbsp butter
- 2 tbsp whipped cream cheese
- 2 tbsp sour cream
- 1 tsp salt
Additional Toppings
- 1 1/2 cups (6 oz) shredded cheddar cheese
- 8 slices bacon, cooked and crumbled
- Fresh chives, chopped
- Sour cream for topping
- Olive oil for brushing dough
Instructions
- Cook Potatoes: Peel and chop the Yukon Gold potatoes into even pieces. Place them in a saucepan and cover with cold water about an inch above the potatoes. Simmer on the stovetop until the potatoes become fork-tender, approximately 15 to 20 minutes. Drain the water thoroughly.
- Prepare Mashed Potatoes: Add butter, whipped cream cheese, 2 tablespoons of sour cream, and salt to the drained potatoes. Mash until smooth and creamy. Set the mashed potato mixture aside.
- Preheat Oven and Prepare Dough: Preheat a pizza stone in the oven at 500°F (260°C) to ensure a crispy crust. Shape the prepared dough into a large pizza circle and place it on a pizza peel or baking sheet. Lightly brush the dough surface with olive oil to help with crisping and flavor.
- Assemble the Pizza: Gently and evenly spread the mashed potato mixture over the pizza dough using a spatula or the back of a spoon. Sprinkle shredded cheddar cheese evenly over the mashed potatoes, adjusting the amount to your preference.
- Bake the Pizza: Transfer the pizza onto the preheated pizza stone in the oven. Bake for 10 to 14 minutes, or until the cheddar cheese is bubbly and starting to brown and the crust is cooked through and golden brown.
- Add Final Toppings and Serve: Remove the pizza from the oven and immediately top with the crumbled bacon and chopped fresh chives. Slice the pizza and serve it warm with additional sour cream on the side for dipping or topping.
Notes
- Yukon Gold potatoes are preferred for their buttery texture which complements the pizza well.
- For a richer flavor, you can substitute sour cream in the mashed potatoes with crème fraîche.
- Adjust cheese quantity according to taste – more cheese makes it heartier.
- Ensure the pizza stone is preheated thoroughly for a crispy crust; if you don’t have a pizza stone, use a baking sheet but preheat it similarly.
- Leftover mashed potatoes can be used but fresh is best for smoothness and flavor.
- Bacon should be crispy but not burnt to add texture without bitterness.
- This pizza is best enjoyed immediately but leftovers can be reheated in a skillet or oven.
