  • 2 teaspoons (10 ml) vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (170°C). Line a 9 x 5 inch loaf pan with parchment paper, leaving some overhang on two sides for easy removal.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, pumpkin spice, and salt until well combined and evenly distributed.
  3. Combine Wet Ingredients: In a separate large mixing bowl, whisk the oil with both the granulated and light brown sugars until the mixture is smooth. Add the eggs one at a time, whisking well after each addition. Then stir in the pumpkin puree and vanilla extract until fully incorporated.
  4. Combine Mixtures: Gradually whisk the dry ingredients into the wet ingredients. Mix until mostly smooth; it’s okay if a few small lumps remain. Avoid overmixing to keep the bread tender.
  5. Prepare Batter and Add Toppings: Pour the batter into your prepared loaf pan, smoothing the top with a spatula. Sprinkle the pepitas evenly over the top for a crunchy finish.
  6. Bake: Bake the pumpkin bread for 55 to 70 minutes. Check doneness by inserting a toothpick in the center; it should come out with just a few moist crumbs. The edges will start to pull away slightly from the pan when done.
  7. Cool: Let the bread cool in the pan for 15 minutes. Use the parchment overhang to carefully lift the loaf out of the pan, then allow the bread to cool completely on a wire rack for about an hour before slicing to serve.
