Filling Ingredients

  • 1 cup fresh spinach, chopped (or frozen, thoroughly drained)
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ¼ teaspoon dried oregano
  • Salt and pepper to taste

Pastry & Finishing

  • 1 sheet of puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Spinach Filling: Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, or if using frozen spinach, cook until the moisture evaporates. Remove the pan from heat and allow the spinach mixture to cool down.
  2. Mix the Cheese Blend: In a mixing bowl, combine the cooked spinach, crumbled feta cheese, softened cream cheese, dried oregano, salt, and pepper. Stir thoroughly until the mixture is well blended and uniform.
  3. Assemble the Twists: Unroll the puff pastry sheet onto a lightly floured surface. Spread the spinach and cheese mixture evenly over one half of the puff pastry sheet. Fold the other half over to cover the filling, creating a rectangle, and gently press down to seal the edges.
  4. Cut & Twist: Using a sharp knife, slice the folded pastry into 1-inch wide strips. Hold each end of a strip and gently twist it several times, then lay the twisted strip onto a baking sheet lined with parchment paper.
  5. Egg Wash & Bake: Brush each twisted pastry generously with the beaten egg to ensure a shiny, golden finish. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes or until the twists have puffed up and turned golden brown. Remove from oven and let cool slightly before serving.

Notes

  • Make sure to thoroughly drain frozen spinach to prevent soggy pastry.
  • For an extra kick, add a pinch of red pepper flakes to the filling mixture.
  • The twists are best served warm but can be enjoyed at room temperature as well.
  • Leftover twists can be refrigerated and reheated in the oven to retain crispiness.
  • You can substitute feta with goat cheese for a creamier texture and different flavor.
