Ingredients

Scale

Ingredients

  • 300g cherry vine tomatoes
  • 1 or 2 small garlic bulbs, cut in half to expose the flesh
  • 150ml olive oil
  • Crusty bread, to serve (optional)

Instructions

  1. Preheat Oven: Heat your oven to 150°C (130°C fan) or gas mark 2 to prepare for slow-cooking the tomatoes and garlic.
  2. Prepare Baking Dish: Place the cherry vine tomatoes and halved garlic bulbs into a snug-fitting baking dish, ensuring they are evenly spaced. Season them well with salt and pepper to enhance the flavor.
  3. Add Olive Oil and Cover: Pour 150ml of olive oil evenly over the tomatoes and garlic. Cover the dish tightly with foil to keep moisture in during cooking.
  4. Slow Cook: Bake in the preheated oven for 1 hour and 15 minutes, allowing the tomatoes to soften and the garlic to mellow while infusing the oil.
  5. Finish and Serve: Remove from the oven, then squash the garlic cloves to release their softened flesh and stir it into the oil. Serve warm alongside crusty bread or use as a flavorful sauce or pizza topping. Store any leftovers in an airtight container in the fridge for up to two weeks once cooled.

Notes

  • This slow-cooked tomato and garlic mixture can be tossed through hot pasta for a quick sauce.
  • It also works beautifully as a topping on pizzas.
  • Let the mixture cool before refrigerating to preserve the flavors and oil.
  • Use a baking dish that fits the ingredients snugly to prevent excessive oil spillage and ensure even cooking.
