4.6 from 59 reviews

This simple and easy cheesecake recipe features a classic graham cracker crust and a creamy, smooth cream cheese filling. Perfect for any occasion, this cheesecake is baked to perfection with a lightly browned edge and a slightly jiggly center, chilled to set and served chilled for a rich, decadent dessert.

Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

Filling

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour

Instructions

  1. Gather Ingredients and Preheat Oven: Collect all your ingredients and preheat your oven to 325°F (163°C). Grease a 9-inch springform pan to ensure easy removal of the cheesecake.
  2. Make the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then set aside to cool.
  3. Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, mixing until well combined. Add the vanilla extract and mix thoroughly.
  4. Add Eggs: Beat in the eggs one at a time, mixing well after each addition to create a smooth batter.
  5. Add Sour Cream and Flour: Mix in the sour cream and all-purpose flour until the mixture is smooth and creamy without lumps.
  6. Pour Filling into Crust: Pour the cream cheese mixture over the cooled crust, spreading it evenly across the surface.
  7. Bake: Place the pan in the preheated oven and bake for 55-70 minutes, or until the center is set and the edges are lightly browned. The center should still jiggle slightly when you gently shake the pan.
  8. Cool and Chill: Allow the cheesecake to cool completely in the pan at room temperature. Once cooled, refrigerate for at least 4 hours, or preferably overnight, to fully set and enhance the flavors.

Notes

  • Make sure the cream cheese is softened to room temperature for a smooth filling without lumps.
  • Do not overbake; the center should remain slightly jiggly to avoid cracks and dryness.
  • A springform pan is recommended for easy removal of the cheesecake after baking.
  • Chilling the cheesecake overnight improves texture and flavor.
  • For an extra smooth surface, run a knife around the edge of the cheesecake after baking to prevent cracking while cooling.
