Shrimp Scampi
- 1 lb large shrimp (peeled and deveined)
- 4 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 cup dry white wine (or chicken broth)
- 2 tbsp freshly squeezed lemon juice
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley, plus more for garnish
- Salt and pepper to taste
Garlic Bread
- 4 thick slices of French or Italian bread
- Garlic butter (made by mixing softened butter with minced garlic and parsley)
- Prepare the Garlic Bread: Preheat the oven to 375°F (190°C). Spread garlic butter evenly on each slice of bread and arrange them on a baking sheet.
- Bake the Garlic Bread: Bake in the preheated oven for 8-10 minutes or until the bread is golden and toasted. Remove from oven and set aside.
- Cook the Shrimp: Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Season and Sauté Shrimp: Season the shrimp with salt and pepper. Add shrimp to the skillet in a single layer and cook for 2-3 minutes per side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Sauce: In the same skillet, add 1 tablespoon of butter and pour in the dry white wine or chicken broth. Let the mixture simmer for 1-2 minutes to reduce slightly.
- Finish the Sauce: Stir in the freshly squeezed lemon juice, red pepper flakes (if using), and the remaining butter. Mix until the sauce is smooth and well combined.
- Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and toss them gently to coat evenly with the sauce.
- Garnish and Serve: Sprinkle chopped fresh parsley over the shrimp, stir gently, then divide shrimp and sauce into serving bowls. Serve each bowl with a slice of warm garlic bread on the side. Enjoy your flavorful shrimp scampi bowls!
Notes
- You can substitute white wine with low-sodium chicken broth if preferred.
- Serve the shrimp scampi over pasta, rice, or zucchini noodles for a complete meal.
- Adjust the red pepper flakes according to your preferred spice level or omit if you want it mild.
- For crispier garlic bread, broil for a minute or two at the end—watch closely to avoid burning.
- Use fresh shrimp for best results; if using frozen, thaw completely and pat dry before cooking.
