For the Tattie Scone Mix
- 500 g potatoes (around 5 small potatoes, peeled & diced)
- 30 g salted butter (1 oz)
- 1 cup self-raising flour (150 g); alternatively use all-purpose flour + 1 tsp baking powder
For Cooking
- Boil the Potatoes: Cover the peeled and diced potatoes with cold water in a medium saucepan. Bring to a boil and cook until soft, about 15 minutes.
- Mash the Potatoes: Drain the cooked potatoes thoroughly. Add 30 g of salted butter and mash until smooth. For an ultra fluffy texture, whip the mashed potatoes with a fork to incorporate air.
- Mix the Dough: Add 1 cup of self-raising flour to the mashed potatoes. Work the mixture gently using a wooden spoon or on low-medium speed if using a mixer, until it forms a light, pliable dough that doesn’t stick excessively to your hands. Adjust flour amount if necessary depending on potato moisture.
- Shape the Scones: Transfer the dough onto a lightly floured surface. Flour the rolling pin and roll out the dough evenly to about 1 cm (½ inch) thickness. Cut the dough into quarters.
- Fry the Scones: Heat a large heavy frying pan (such as cast iron) over medium heat. Add 1 tbsp butter for frying. Place scones in the pan ensuring space to flip them. Cook each side for 3-5 minutes until crispy and golden brown.
- Serve: Serve the tattie scones immediately while hot, with butter, jam, or as part of a traditional full Scottish breakfast.
Notes
- If using leftover mashed potatoes, skip boiling and mashing steps and start mixing the dough directly.
- Adjust the flour amount according to moisture content to get the right dough consistency.
