Instructions

  1. Heat the oil and sauté onion: Heat the extra-virgin olive oil over medium heat in a large Dutch oven or stockpot. Once the oil is shimmering, add the diced yellow onion and sauté for 5 minutes until translucent and fragrant.
  2. Add carrots and continue to sauté: Add the peeled and diced carrots to the pot and sauté with the onion for an additional 5 minutes until the carrots soften. Then add the minced garlic, honey or alternative sweetener, tomato paste, kosher salt, ground cumin, ground coriander, ground ginger, cinnamon, and a pinch of cayenne pepper if using. Sauté everything together for about 1 minute more to allow the spices to release their aromas.
  3. Add lentils, liquid, and bay leaf to simmer: Stir in the rinsed red lentils along with the 6 cups of water, vegetable, or chicken broth. Add the bay leaf. Increase the heat to bring the mixture to a boil, then reduce to low heat, cover the pot, and let it simmer for about 20 minutes, or until the lentils are tender and cooked through.
  4. Add lemon juice and adjust seasoning: Remove the lid and stir in the fresh lemon juice. This addition helps to break down the lentils further and brightens the flavors. Taste the soup and adjust the seasoning as needed, adding more salt if water was used instead of broth.
  5. Puree or leave chunky: For a smoother consistency, use an immersion blender to purée the soup until creamy. Alternatively, leave the soup chunky if you prefer a heartier texture.
