  • 2 tbsp maple syrup
  • 50 g dark chocolate, melted (plus extra for coating/dipping, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (160°C fan) or 350°F to ensure it’s ready for baking the pumpkin seed mixture.
  2. Mix Ingredients: In a mixing bowl, combine the pumpkin seeds, maple syrup, and a pinch of salt. Stir well to coat all the seeds evenly with the syrup and salt.
  3. Prepare Baking Sheet: Option 1: Lightly oil a round cookie cutter and place it on a baking sheet lined with parchment paper. Spoon a couple of teaspoons of the seed mixture into the cutter and press down firmly. Carefully remove the cutter and repeat the process to form more bites.
    Option 2: If you don’t have a cookie cutter, simply spoon portions of the mixture directly onto the lined baking sheet to create clusters.
  4. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes until the bites are set and slightly golden. Remove from oven and let cool completely so they firm up.
  5. Add Chocolate Coating (Optional): Once cooled, dip or coat the bites in melted dark chocolate or a combination of dipping and coating for extra richness.
