This Creamy One-Pot Beef and Potato Casserole is a comforting and simple dinner perfect for busy weeknights. Ground beef, tender sliced potatoes, and a creamy mushroom sauce are layered and baked to perfection, topped with melted cheddar cheese and fresh parsley for a hearty, satisfying meal.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Potato Layer

  • 2 cups thinly sliced russet or Yukon gold potatoes

Creamy Sauce

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup whole milk or heavy cream
  • 1/2 cup sour cream (optional for extra creaminess)

Topping

  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking the casserole.
  2. Cook Beef and Onion: In a skillet, brown the ground beef along with the chopped onion. Season with salt, pepper, and paprika. Cook until beef is no longer pink and onion is translucent. Drain any excess fat to keep the casserole from being too greasy.
  3. Prepare Creamy Sauce: In a mixing bowl, combine the cream of mushroom soup, milk (or heavy cream), and sour cream. Stir until the mixture is smooth and well blended.
  4. Layer Beef: Grease a 9×13-inch baking dish and spread the cooked beef and onion mixture evenly across the bottom.
  5. Add Potato Layer: Arrange the thinly sliced potatoes evenly over the beef layer, ensuring full coverage.
  6. Pour Sauce: Pour the creamy mushroom mixture over the potatoes, spreading it evenly to cover all slices.
  7. Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly on top of the creamy layer.
  8. Bake Covered: Cover the dish with foil and bake in the preheated oven for 45 minutes, allowing the potatoes to cook through and flavors to meld.
  9. Bake Uncovered: Remove the foil and continue baking for an additional 15 minutes. This will brown and bubble the cheese, giving a delicious golden crust.
  10. Rest and Garnish: Let the casserole rest for 5 to 10 minutes after baking. Garnish with freshly chopped parsley before serving for a fresh finish.

Notes

  • For extra creaminess, don’t skip the sour cream in the sauce mix.
  • If you prefer a lighter version, substitute whole milk with 2% or skim milk, though it may reduce richness.
  • Make sure to slice potatoes thinly and evenly to ensure they cook through properly.
  • Use a sharp cheddar cheese for the best flavor melt and richness.
  • This casserole can be prepared a day ahead; refrigerate before baking and add extra baking time if chilled.
  • Leftovers keep well in the fridge for up to 3 days and can be reheated in the oven or microwave.
