Meat and Marinade
- 400g lean pork shoulder, cut into 2cm chunks
- 1 tbsp olive oil
- ½ tbsp dried oregano
- 1 lemon, zested and juiced
- ½ tsp hot paprika
- Salt, to taste
Yogurt Sauce
- 100ml fat-free yogurt
- 1 small garlic clove, grated
- ½ cucumber, trimmed and grated

Vegetables and Serving
- 2 red peppers, deseeded and cut into chunks
- 2 Little Gem lettuce, leaves separated
- Chilli sauce, to serve (optional)
- Flatbreads, warmed, to serve (optional)
- Marinate the Pork: Place the pork chunks in a large bowl along with olive oil, dried oregano, lemon zest and juice, hot paprika, and a good pinch of salt. Toss everything thoroughly to ensure the pork is evenly coated. Allow the mixture to marinate for 10 minutes to absorb the flavors.
- Prepare the Yogurt Sauce: In a separate bowl, combine the fat-free yogurt, grated garlic clove, and grated cucumber. Season the mixture with salt to taste and set aside to let the flavors meld while the pork marinates.
- Preheat Grill and Skewer Ingredients: Heat the grill to high. Thread the marinated pork and red pepper chunks alternately onto four metal skewers. Place the skewers on a non-stick baking sheet to catch any drippings and make handling easier.
- Grill the Souvlaki: Grill the skewers for about 3 to 4 minutes on each side, turning until the pork is cooked through and nicely golden brown. Ensure the pork reaches a safe internal temperature suitable for pork (about 71°C or 160°F).
