Instructions

  1. Prepare Ingredients: Peel and dice the potatoes and carrots. Chop the white and light green parts of the scallions, finely chop the onion, mince the garlic, and chop the fresh dill. Having all your ingredients ready ensures smooth cooking.
  2. Sauté Aromatics and Vegetables: Heat unsalted butter over medium-low heat in a large pot. Add minced garlic and finely chopped onion, cooking for 1 minute until fragrant. Stir in diced carrots and chopped scallions and continue cooking for 2 minutes to soften the vegetables.
  3. Add Spices: Mix in salt, black pepper, dried marjoram, ground turmeric, ground nutmeg, and the bay leaf. Stir well to coat the vegetables and let the spices bloom for a minute.
  4. Simmer Soup: Add diced potatoes and frozen green peas to the pot. Pour in the chicken broth and increase the heat to high to bring the mixture to a boil. Once boiling, cover the pot and reduce heat to low. Simmer gently for 15 minutes until the potatoes are tender.
  5. Incorporate Sour Cream and Dill: Remove the lid and stir in the room temperature sour cream until it is fully blended into the soup, adding creaminess. Add 3 tablespoons of fresh chopped dill and cook uncovered for an additional 5 minutes, allowing flavors to meld.
