The Pineapple Paradise Cocktail is a tropical, refreshing drink bursting with the flavors of fresh pineapple juice, creamy coconut, zesty lime, and a splash of white rum. Ingredients

Scale

Main Ingredients

  • 2 cups fresh pineapple juice
  • ½ cup coconut cream
  • ¼ cup fresh lime juice
  • ½ cup white rum (optional for a mocktail)
  • 1 tbsp simple syrup (adjust to taste)
  • 1 cup ice cubes

Garnishes & Extras

  • Pineapple slices (for garnish)
  • Maraschino cherries (for garnish)
  • Toasted coconut flakes (optional for rim)

Instructions

  1. Rim the Glass with Toasted Coconut (Optional): Rub a lime wedge around the rim of your glass, then dip it into toasted coconut flakes to give it a tropical, decorative touch.
  2. Add Ice to the Shaker: Fill a cocktail shaker about halfway with ice cubes to chill the drink as you mix it.
  3. Pour in the Liquids: Add the fresh pineapple juice, coconut cream, fresh lime juice, white rum (or omit for a mocktail), and simple syrup into the shaker.
  4. Shake It Up! Seal the shaker tightly and shake vigorously for 15-20 seconds until the mixture is well blended and chilled.
  5. Strain & Pour: Using a strainer, pour the cocktail into a chilled glass while leaving the ice behind in the shaker.
  6. Garnish & Serve: Add a pineapple slice, a maraschino cherry, and a sprinkle of toasted coconut flakes on top for a visually appealing and flavorful finish.

Notes

  • Use fresh pineapple juice for the best natural flavor; store-bought juice works but fresh is preferred.
  • Chilling your glasses beforehand keeps the cocktail cooler for longer.
  • For a creamier and frozen variation, blend the ingredients with ice instead of shaking.
  • Make it a mocktail by skipping the rum and adding extra pineapple juice or coconut water.
  • Rimming glasses with toasted coconut adds texture and a fancy tropical look.
  • Simple syrup can be substituted with honey for a different sweetness profile.
  • Pre-mix the cocktail (excluding ice) and store in the fridge for up to one day; shake again before serving.
  • Freeze pineapple juice into ice cubes to keep your drink cold without watering it down.
  • Extra cocktail can be frozen into popsicle molds for a fun frozen treat.
