- 1 lb Ground Beef (or ground turkey, chicken, or pork)
- 3 medium Potatoes (peeled and diced)

- Cook the Potatoes: Add the peeled and diced potatoes to a heated skillet with olive oil and cook, stirring occasionally, for about 8-10 minutes until they begin to soften and develop a light brown color.
- Remove Potatoes: Once browned and slightly tender, remove the potatoes from the skillet and set them aside to keep warm.
- Cook the Ground Meat: In the same skillet, add the ground beef and cook over medium heat until browned and cooked through, breaking it up as it cooks. Drain any excess fat if needed.
- Add Vegetables and Seasonings: Stir in the chopped onion, bell pepper, and minced garlic. Then add paprika, onion powder, garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until the vegetables are softened and fragrant.
- Combine and Simmer: Return the cooked potatoes to the skillet. Pour in the beef broth and stir everything together. Cover the skillet and let it simmer for about 5 minutes, or until the potatoes are tender and the liquid has reduced slightly.
- Add the Cheese: Sprinkle the shredded cheddar cheese evenly over the skillet contents. Cover and continue to cook for 2-3 minutes until the cheese has melted and is bubbly and golden.
- Garnish and Serve: Optionally, sprinkle fresh parsley over the skillet before serving for a pop of color and freshness.
