Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsweetened cocoa powder

Wet Ingredients

  • ¾ cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 cup whole milk
  • 2 tsp strawberry extract

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C) and grease three round cake pans to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt until well combined; set this mixture aside for later use.
  3. Cream Butter and Sugar: In a separate large bowl, cream the softened butter with the granulated sugar until the mixture is light and fluffy, which helps create a tender cake texture.
  4. Add Eggs and Milk: Beat in the eggs one at a time to incorporate them fully, then slowly add the milk, mixing gently.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture into the wet ingredients and stir until just combined to avoid overmixing, which can toughen the cake.
  6. Divide and Flavor Batter: Split the batter evenly into three bowls. Leave one plain for vanilla flavor, mix the cocoa powder thoroughly into the second bowl for chocolate flavor, and add the strawberry extract into the third for the strawberry flavor.
  7. Bake the Cakes: Pour each flavored batter evenly into the prepared pans and bake in the preheated oven for 25 to 30 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
  8. Cool and Assemble: Let the cakes cool completely in their pans for about 10 minutes, then transfer to cooling racks. Once fully cooled, stack the layers with your choice of frosting or filling between each to complete the Neapolitan Cake.

Notes

  • Ensure all ingredients, especially eggs and butter, are at room temperature to help with smooth mixing and better rise.
  • Use three identical pans for even layer thickness.
  • The choice of frosting is flexible; classic choices include whipped cream, buttercream, or cream cheese frosting.
  • Allow cakes to cool completely before frosting to prevent melting.
  • For a stronger strawberry flavor, you can substitute strawberry extract with fresh strawberry puree but adjust the liquid quantities accordingly.
