Ingredients

Scale

Meat and Oil

  • 1 pound ground beef
  • 1 tablespoon olive oil

Vegetables

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • ½ cup cherry tomatoes, halved

Seasonings and Others

  • ¼ cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of ½ lemon

Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for sautéing the aromatics.
  2. Sauté onion and garlic: Add the diced onion and minced garlic to the skillet and cook until fragrant and softened, about 2-3 minutes.
  3. Cook ground beef: Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s fully browned. Drain any excess fat if necessary.
  4. Add vegetables: Stir in the chopped zucchini, red bell pepper, and halved cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  5. Incorporate seasonings and olives: Add the sliced Kalamata olives, dried oregano, ground cumin, paprika, salt, and black pepper. Stir everything well and cook for another 2-3 minutes to blend flavors.
  6. Finish with cheese and parsley: Remove skillet from heat, then mix in the crumbled feta cheese and chopped fresh parsley for added flavor and texture.
  7. Add lemon juice and serve: Squeeze the juice of half a lemon over the stir fry to brighten the dish just before serving.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Feel free to add more vegetables like eggplant or spinach for variation.
  • Use low-sodium feta cheese to reduce sodium content if desired.
  • Serve with warm pita bread or over cooked quinoa or rice for a fuller meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
