  • ⅓ cup crumbled feta cheese

Vegetables & Toppings

  • 4 ounces cherry tomatoes (halved or quartered)
  • ½ cup chopped fresh spinach
  • ½ small red onion (sliced)
  • ¼ cup kalamata olives (sliced)

Instructions

  1. Preheat the oven: Set your oven to 425˚F (220˚C) to get it hot and ready for baking the flatbreads.
  2. Prepare the flatbreads: Place each flatbread on a baking sheet. Evenly spread about two tablespoons of pesto over each flatbread as the flavorful base layer.
  3. Add cheese and chicken: Sprinkle ½ cup shredded mozzarella over each flatbread. Then, distribute shredded rotisserie chicken evenly on top of the cheese.
  4. Add vegetables and toppings: Top each flatbread with halved cherry tomatoes, chopped fresh spinach, sliced red onions, and sliced kalamata olives. Finish by sprinkling crumbled feta cheese over the entire flatbread and drizzling a little extra pesto for extra flavor.
  5. Bake the flatbreads: Place the baking sheet on the middle rack of the oven and bake for 10 to 12 minutes. Bake until the cheese is melted, bubbly, and the edges of the flatbreads are crispy to your liking.
  6. Serve: Remove the baking sheet from the oven, let the flatbreads cool slightly, then cut each into 3 to 4 slices. Serve immediately and enjoy the fresh Mediterranean flavors!
