  • 2 tbsp olive oil, for searing

Sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)

Pasta & Garnish

  • 8 oz pasta (e.g., penne, rigatoni, or fettuccine)
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Season & Sear Chicken: Season the sliced chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown and cooked through, about 3-4 minutes per side. Remove chicken from the skillet and set aside.
  3. Sauté Garlic & Sun-Dried Tomatoes: In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds. Stir in the chopped sun-dried tomatoes and cook for another minute to release their flavors.
  4. Prepare Sauce: Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir continuously until the cheese melts and the sauce thickens smoothly. Season the sauce with Italian seasoning and crushed red pepper flakes if using.
  5. Combine Chicken & Pasta: Return the cooked chicken to the skillet, then add the drained pasta. Toss everything together thoroughly to coat the pasta and chicken evenly in the creamy sauce.
