4.7 from 111 reviews

These marinated grilled mushroom skewers are a flavorful and satisfying dish perfect as an appetizer, side, or main course. Button mushrooms are soaked in a savory marinade made with olive oil, soy sauce, balsamic vinegar, and aromatic herbs, then grilled to tender, slightly charred perfection. The marinade infuses each bite with a delightful balance of tangy, sweet, and smoky notes.

Ingredients

Scale

For the Marinade:

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

For the Skewers:

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a medium bowl, mix together olive oil, soy sauce, balsamic vinegar, and Worcestershire sauce until combined. Add minced garlic, Dijon mustard, and honey or maple syrup. Stir well then incorporate dried thyme, dried rosemary, smoked paprika, salt, and black pepper. Whisk thoroughly until smooth.
  2. Marinate the Mushrooms: Place the cleaned button mushrooms into a large resealable bag or shallow dish. Pour the marinade over them, ensuring even coating. Seal or cover and refrigerate for at least 30 minutes, preferably 2–3 hours for maximum flavor infusion.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers do not require soaking.
  4. Preheat the Grill: Heat your grill to medium-high heat. For charcoal grills, light the charcoal and wait until covered with white ash. For gas grills, turn burners to medium-high and close the lid to preheat.
  5. Assemble the Skewers: Remove mushrooms from marinade and thread onto skewers, leaving a little space between each to promote even cooking. Optionally alternate with other vegetables like bell peppers, cherry tomatoes, or zucchini for variety.
  6. Grill the Mushrooms: Place skewers on the preheated grill. Cook for 10–12 minutes, turning occasionally to cook evenly on all sides. Brush with leftover marinade during grilling to enhance flavor. Mushrooms should be tender and slightly charred.
  7. Serve and Enjoy: Remove from grill and let cool slightly. Arrange on a platter and garnish with fresh chopped parsley. Serve warm as an appetizer, side dish, or light main course.

Notes

  • Marinate mushrooms longer (up to 3 hours) for deeper flavor.
  • Soaking wooden skewers prevents them from burning on the grill.
  • Adding other vegetables can add color and texture to the skewers.
  • Brush mushrooms with extra marinade while grilling to keep them moist and flavorful.
  • Use metal skewers if short on prep time since they don’t require soaking.
  • Serve with fresh herbs like parsley for visual appeal and added freshness.
