Ingredients

Scale

Main Ingredients

  • 8 slices bacon (diced)
  • 4 cups all-purpose flour
  • 1 cup shredded extra-sharp cheddar cheese
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 3/4 cup unsalted butter (frozen)
  • 1 1/2 cups buttermilk
  • 6 tablespoons maple syrup (divided)
  • 2 tablespoons melted unsalted butter

Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Cook Bacon: Heat a large skillet over medium-high heat. Add the diced bacon and cook until it’s browned and crispy, about 6 to 8 minutes. Drain any excess fat and transfer the bacon to a paper towel-lined plate to cool.
  3. Mix Dry Ingredients: In a large bowl, combine the cooked bacon, all-purpose flour, shredded cheddar cheese, baking powder, kosher salt, and baking soda.
  4. Incorporate Butter: Using the large holes of a box grater, grate the frozen unsalted butter and stir it into the flour mixture until it is well distributed.
  5. Combine Wet Ingredients and Form Dough: In a medium bowl, whisk together the buttermilk and 4 tablespoons of maple syrup. Pour this mixture into the flour mixture and stir with a rubber spatula until a soft dough forms.
  6. Knead and Shape Dough: On a lightly floured surface, knead the dough 3 to 4 times until it comes together. Roll it out into a 1 1/4-inch thick rectangle using a rolling pin. Cut out 12 rounds with a 2 to 2 1/2-inch biscuit or cookie cutter. Arrange the biscuits on the prepared baking sheet and place them in the freezer for 15 minutes.
  7. Bake Biscuits: Remove the biscuits from the freezer and bake them in the preheated oven for 15 to 18 minutes or until they turn golden brown.
  8. Prepare Maple Butter Glaze: In a small bowl, whisk together the remaining 2 tablespoons of maple syrup with the melted unsalted butter.
  9. Serve: Brush the warm biscuits with the maple butter mixture and serve immediately for the best flavor and texture.

Notes

  • Freezing the biscuits before baking helps them hold their shape and results in a flakier texture.
  • Use extra-sharp cheddar for a pronounced cheesy flavor.
  • Drain bacon well after cooking to prevent excess grease in the dough.
  • For a dairy-free alternative, substitute buttermilk with a plant-based milk mixed with lemon juice.
  • Biscuits are best served warm and fresh from the oven.
