Tea and Spice Base

  • 2 cups Water
  • 2 Black tea bags (preferably Assam or Darjeeling)
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground cardamom
  • 1/4 tsp Ground cloves
  • 1/4 tsp Ground ginger
  • 1 Vanilla bean, split and scraped or 1 teaspoon pure vanilla extract

Sweetener

  • 2 tbsp Honey (or to taste)

Milk and Serving

  • 1 cup Milk (dairy or plant-based such as almond or oat milk)
  • Ice cubes
  • Optional garnishes: a sprinkle of cinnamon, vanilla pods or star anise

Instructions

  1. Infuse the spices and tea: Add the tea bags, ground cinnamon, cardamom, cloves, and ginger to boiling water. Reduce heat and simmer for about 5 minutes to extract the flavors and infuse the water with aromatic spices.
  2. Add vanilla and sweeten: Remove from heat. If using a vanilla bean, stir in the scraped seeds and drop the pod into the tea. Add honey, stirring well and adjusting the sweetness to your preference.
  3. Strain and cool: Remove the tea bags and vanilla pod. Let the chai mixture cool to room temperature; place the pan in an ice water bath to speed up the process if desired.
  4. Froth the milk: Froth milk using a milk frother or shake vigorously in a sealed jar. Alternatively, warm the milk slightly and whisk briskly to create froth.
  5. Assemble the latte: Fill a large glass or jar with ice cubes, pour the cooled chai over the ice filling about two-thirds of the glass.
  6. Add the frothy milk: Slowly pour frothed milk over the chai, allowing it to swirl and blend gently. If using vanilla extract instead of the bean, stir the extract into the milk before pouring.
  7. Garnish and serve: Sprinkle with cinnamon, add vanilla pod pieces or star anise for decoration and enhanced aroma. Serve immediately and enjoy your iced vanilla chai latte!
