Instructions

  1. Cook the Eggs: Place the eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, turn off the heat, cover the pot, and let the eggs sit for 10 to 12 minutes. Drain the hot water, cool the eggs under cold running water, peel, and chop them into small pieces.
  2. Mix the Base: In a medium mixing bowl, combine the mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Stir until well blended, then fold in the chopped eggs until they are well coated with the mixture.
  3. Add Cheese & Bacon: Mix the shredded sharp cheddar cheese and half of the crumbled bacon into the egg mixture, folding them evenly throughout.
  4. Bake: Preheat your oven to 350°F (175°C). Grease a baking dish lightly, then spread the egg mixture evenly in the dish. Bake uncovered for 15 to 20 minutes, or until the dip is hot and bubbly.
  5. Garnish & Serve: Remove the dip from the oven and sprinkle the remaining bacon, chopped green onions, and a pinch of paprika over the top. Serve the warm dip with crackers, chips, or toasted bread slices for dipping.
