4.7 from 65 reviews

Deliciously refreshing homemade strawberry popsicles made from fresh strawberries, sugar, and a touch of lemon juice. These easy-to-make frozen treats are perfect for hot days and are naturally sweet and fruity with no artificial additives.

Ingredients

Scale

Strawberries

  • 1 ½ pounds fresh strawberries (washed, hulled, and chopped)

Syrup

  • ½ cup granulated sugar
  • ½ cup water
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the mixture: Combine strawberries, sugar, and water in a blender. Add lemon juice if using. Blend until the mixture is smooth and well combined.
  2. Fill the molds: Carefully pour the blended strawberry mixture into popsicle molds, filling each cavity almost to the top.
  3. Insert sticks: Cover the mold with the lid and insert the popsicle sticks firmly so they stand upright.
  4. Freeze: Place the mold in the freezer and freeze for at least 5 hours, or until the popsicles are completely solid.
  5. Unmold the popsicles: Remove the popsicle mold from the freezer and run the outside under warm water for 10 to 20 seconds. This helps loosen the popsicles for easy removal.
  6. Serve or store: Enjoy immediately or individually wrap each popsicle in small plastic bags, seal them, and return to the freezer for later enjoyment.

Notes

  • Use ripe, sweet strawberries for the best flavor.
  • Lemon juice is optional but helps brighten the flavor and preserve color.
  • If you prefer a smoother texture, strain the blended mixture to remove seeds before freezing.
  • You can substitute sugar with honey or a sugar alternative for different sweetness profiles.
  • Make sure to freeze the popsicles for at least 5 hours to ensure they are fully set.
  • Store popsicles in airtight containers or bags to avoid freezer burn and preserve freshness.
