These Healthy Peanut Butter Cookies are a simple and delicious treat made with creamy peanut butter, maple syrup, and a few wholesome ingredients. Naturally sweetened and free from refined sugar, these cookies offer a moist, chewy texture with a classic peanut butter flavor, perfect for a guilt-free snack or dessert.

Ingredients

Scale

Cookie Dough

  • 1 1/4 cups creamy peanut butter (not too runny)
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Ingredients: In a large bowl, combine the peanut butter, maple syrup, eggs, vanilla extract, and sea salt (if using). Whisk well until the mixture is smooth and slightly thickens; it may be runny and lumpy initially but will come together with mixing.
  3. Chill Dough: Refrigerate the cookie dough for at least 15-20 minutes to firm up, which will make it easier to scoop and shape.
  4. Shape Cookies: Using a medium cookie scoop, place balls of dough on the prepared baking sheet about 2 inches apart. Flatten each ball with a fork in a crisscross pattern to about 1/4 inch thickness in the center; edges may remain slightly thicker, which is fine.
  5. Bake: Bake in the preheated oven for 10-12 minutes until the edges are very lightly golden but the cookies remain a bit underbaked in the middle for soft texture.
  6. Cool: Allow the cookies to cool completely on the baking sheet. They will firm up as they cool, giving the perfect chewy consistency.

Notes

  • If you prefer less sweetness, reduce maple syrup slightly to 1/3 cup.
  • For a crunchier texture, add 1/4 cup chopped peanuts to the dough.
  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
  • Make sure to use creamy peanut butter, not overly runny, for best texture.
