  • 1 tsp ground cumin

  • 14 oz can diced tomatoes
  • 2 (14 oz) cans chickpeas, drained and rinsed
  • ½ cup vegetable broth or water
  • Salt and freshly ground black pepper, to taste
  • Zest and juice of 1 lemon
  • 2 tbsp chopped fresh parsley or cilantro

  • Crumbled feta cheese, to serve

Instructions

  1. Cook pasta: Bring a large pot of salted water to a boil. Add the dried pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the pasta and set it aside.
  2. Sauté aromatics: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 4 to 5 minutes, until the onion is soft and translucent.
  3. Incorporate spices and garlic: Add the minced garlic, harissa paste, ground cumin, and smoked paprika to the skillet. Cook for about 1 minute while stirring constantly until the spices become fragrant.
  4. Simmer sauce: Add the diced tomatoes, drained chickpeas, and vegetable broth to the skillet. Season with salt and freshly ground black pepper to taste, stir everything to combine, and bring the mixture to a simmer.
  5. Cook sauce: Cover the skillet and let the sauce cook over medium-low heat for 10 to 12 minutes, stirring occasionally. This allows the sauce to thicken and for the flavors to meld beautifully.
  6. Combine pasta and sauce: Add the cooked pasta to the skillet with the sauce and toss thoroughly to coat the pasta evenly. If the sauce feels too thick, loosen it by adding some of the reserved pasta water a little at a time until desired consistency is reached.
  7. Finish with lemon and herbs: Remove the skillet from heat. Stir in the lemon zest, lemon juice, and chopped fresh parsley or cilantro. Taste the dish and adjust the seasoning with more salt or pepper if needed.
  8. Serve: Serve the harissa chickpea pasta warm, garnished with extra fresh herbs and optional crumbled feta cheese if desired for an added creamy texture.
