  • 1 pound ground turkey

Vegetables

  • 2 medium zucchinis, sliced into half-moons
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced

Others

  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Crushed red pepper flakes, to taste

Instructions

  1. Heat oil: Heat olive oil in a large skillet over medium heat to prepare for sautéing the vegetables and cooking the meat.
  2. Sauté onion: Add chopped onion and cook for 3-4 minutes until soft and translucent, creating a flavorful base.
  3. Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant, enhancing the aroma.
  4. Cook turkey: Crumble ground turkey into the skillet and cook for 6-8 minutes, stirring occasionally, until evenly browned and cooked through.
  5. Prepare zucchini: Slice zucchinis into half-moons and add them to the skillet with the turkey, mixing well.
  6. Cook zucchini: Stir and cook for 4-5 minutes until zucchini becomes tender but still retains some bite.
  7. Season and add broth: Sprinkle dried oregano, salt, black pepper, and crushed red pepper flakes to taste, then pour in chicken broth to add moisture and depth.
  8. Simmer: Reduce heat to low and simmer the mixture for 3-4 minutes to allow flavors to meld and broth to reduce slightly.
  9. Add cheese: Sprinkle grated Parmesan cheese over the skillet and stir until melted and incorporated for richness.
  10. Final taste and serve: Adjust seasoning as needed and serve the dish immediately while warm.

Notes

  • Use lean ground turkey to keep the dish healthy and lower in fat.
  • Zucchini can be substituted with yellow squash for a slightly different flavor.
  • For a spicier kick, increase crushed red pepper flakes according to your preference.
  • Chicken broth can be replaced with vegetable broth for a lighter taste.
  • Serve over rice, quinoa, or cauliflower rice to make it into a more filling meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
