Ingredients

Scale

Meat and Seasonings

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)

Vegetables and Sauce

  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup sweet chili sauce
  • 1/2 lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the Ground Beef: Add the ground beef to a large skillet and crumble it. Mix in the sliced green onions, then season with kosher salt, freshly ground black pepper, garlic powder, and sriracha if using. Stir in the low sodium soy sauce. Cook the beef mixture over medium heat until it is fully cooked through and no longer pink. Once done, remove the beef from the skillet and set aside on a plate.
  2. Sauté the Brussels Sprouts: Add a tablespoon of avocado oil to the same skillet and heat over medium-high heat. Toss in the shredded Brussels sprouts, then season with salt and pepper to taste. Sauté the sprouts, stirring occasionally, until they become soft and develop a caramelized golden-brown color, about 7 to 10 minutes.
  3. Combine Beef and Brussels Sprouts: Return the cooked ground beef mixture to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and squeeze in the lime juice. Stir everything together thoroughly, ensuring the mixture is evenly coated with the sauce and heated through, about 2 to 3 minutes.
  4. Finish and Serve: Sprinkle sesame seeds over the top, if desired, for added texture and flavor. Serve the dish hot over steamed rice or enjoy as a standalone low-carb meal.

Notes

  • Shredded Brussels sprouts can be prepared by thinly slicing them with a sharp knife or using a food processor.
  • Adjust the amount of sriracha based on your preferred spice level or omit it for a milder flavor.
  • Low sodium soy sauce helps control saltiness, but you can use regular soy sauce if preferred.
  • Avocado oil is used for its high smoke point, but you can substitute with other neutral oils like canola or vegetable oil.
  • Serve with steamed jasmine or brown rice, quinoa, or cauliflower rice for a keto-friendly option.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
