  • 1/2 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 lb lean ground beef (90-93% lean)
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tsp dried oregano
  • 1/2 small cabbage, chopped (about 3 cups)
  • 1/2 cup fresh dill, chopped
  • Juice from 1/2 lemon

  • Cooked long-grain rice

Instructions

  1. Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-6 minutes until softened and translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
  2. Cook the Ground Beef: Push the onions to one side of the skillet and add the ground beef. Season generously with kosher salt and freshly ground black pepper. Brown the beef for 3-5 minutes, breaking it up with a spatula as it cooks, until no longer pink.
  3. Add Seasoning and Cabbage: Stir in the dried oregano and chopped cabbage. Cover the skillet and let the mixture simmer, stirring occasionally, until the cabbage softens and cooks down, about 8-10 minutes.
  4. Finish with Herbs and Lemon: Turn off the heat, then stir in the freshly chopped dill and the juice of half a lemon. Adjust seasoning with more salt and pepper if needed.
  5. Serve: Spoon the cabbage and beef mixture over a bed of cooked long-grain rice. Add extra freshly ground black pepper to taste and enjoy.
