Meatloaves
- 2 lbs ground chicken
- 1/2 yellow onion, diced (about 1/2 cup)
- 8–10 garlic cloves, pressed
- 3/4 cup bread crumbs (or 2 slices of dense bread, crumbled)
- 1 egg
- 3 Tbsp fresh minced parsley
- 3 oz fresh grated Parmesan cheese
- Salt, to taste
- Fresh cracked black pepper, to taste
- Optional: extra fresh grated Parmesan cheese to top
Sauce
- 2 Tbsp olive oil
- 3 garlic cloves, pressed
- 1 Tbsp all purpose flour
- 1 1/2 cups heavy whipping cream
- 3 oz fresh grated Parmesan cheese
- 1 Tbsp minced fresh parsley
- Salt, to taste
- Prepare Meatloaf Mixture: In a large mixing bowl, combine ground chicken, diced yellow onion, pressed garlic, bread crumbs, egg, fresh minced parsley, grated Parmesan cheese, salt, and freshly cracked black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C) and grease a muffin baking pan to prevent sticking.
- Shape Meatloaves: Use an ice cream scoop to portion out even amounts of the chicken mixture. Shape each portion into a ball, then gently press them into the muffin cups to form mini meatloaves. Optionally, sprinkle extra grated Parmesan cheese on top for added flavor and texture.
- Bake Meatloaves: Bake the meatloaves in the oven for 22-25 minutes, or until the internal temperature reaches 165°F (74°C) and juices run clear, indicating they are fully cooked.
- Prepare Garlic Parmesan Sauce: While meatloaves bake, heat olive oil in a saucepan over medium heat. Add pressed garlic and sauté until fragrant without browning. Whisk in the all-purpose flour to create a roux, cooking briefly until fully incorporated.
- Add Cream: Reduce heat to medium-low and gradually pour in heavy whipping cream while continuously whisking to avoid lumps. Continue whisking until the mixture is smooth and heated through, but not boiling.
- Add Cheese and Seasoning: Stir in grated Parmesan cheese and salt, whisking slowly until the cheese melts and the sauce becomes smooth. Remove from heat and stir in minced fresh parsley.
- Serve: Once the mini meatloaves are done baking, top each with a generous spoonful of the creamy garlic Parmesan sauce and serve warm.
Notes
- Ensure the meatloaves reach an internal temperature of 165°F to ensure safety and juiciness.
- Use fresh grated Parmesan for the best flavor and a smoother sauce.
- For a gluten-free option, substitute the bread crumbs and all-purpose flour with suitable gluten-free alternatives.
- Adjust garlic quantity to taste if you prefer a milder or stronger garlic flavor.
- These mini meatloaves can be made ahead and refrigerated before baking for convenience.
