Ingredients

Scale

Apple Fritters

  • ½ cup cassava flour
  • ¼ cup tapioca starch
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 3 tbsp maple sugar
  • 1 tbsp maple syrup
  • ½ tsp cinnamon
  • ½ cup carbonated water
  • 1 tbsp apple cider vinegar
  • 1 cup peeled and diced apple
  • Avocado oil (for frying)

Maple Glaze (optional)

  • ¼ cup coconut butter
  • 2 tbsp coconut milk
  • 2 tbsp maple syrup
  • Pinch sea salt
  • ½ tsp pure vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine cassava flour, tapioca starch, baking soda, sea salt, cinnamon, and maple sugar. Stir thoroughly to ensure all dry ingredients are well mixed.
  2. Form Batter: Create a well in the center of the dry ingredients and add maple syrup, carbonated water, and apple cider vinegar. Stir gently until a smooth batter forms without lumps.
  3. Fold in Apples: Carefully fold the peeled and diced apples into the batter, evenly distributing them without overmixing to maintain texture.
  4. Heat Oil: In a pot or deep pan, pour enough avocado oil to cover the fritters fully without touching the bottom when frying. Heat the oil over medium to medium-high heat to reach an ideal frying temperature (around 350°F/175°C).
  5. Portion Dough: Using a large cookie scoop, ice cream scoop, or large spoon, scoop the batter into 7 or 8 even pieces. Slightly flatten each piece to prepare for frying.
  6. Fry Fritters: Carefully lower each dough piece fully submerged into the hot oil using tongs or a slotted spoon. Fry for approximately 2 to 2.5 minutes per side until they turn golden brown and crispy.
  7. Drain and Cool: Remove fritters with a slotted spoon and place them on a cooling rack set over a parchment paper-lined baking sheet or a paper towel-lined plate. This allows excess oil to drain. Let them cool slightly before serving.
  8. Prepare Maple Glaze (Optional): In a small saucepan over low heat, combine coconut butter, coconut milk, maple syrup, sea salt, and vanilla extract. Stir until melted and smooth. Adjust consistency by adding extra coconut milk if needed to make it pourable.
  9. Serve: Drizzle the warm maple glaze over the cooked apple fritters. Serve immediately for best taste and texture.

Notes

  • Use ripe but firm apples to ensure they hold shape during frying.
  • Maintain oil temperature for even cooking; too low will result in oily fritters, too high can burn them.
  • Avocado oil is used for frying due to its high smoke point and neutral flavor.
  • Carbonated water helps make the batter light and airy for crispness.
  • The maple glaze is optional but adds a lovely sweet finishing touch.
  • Make sure to drain the fritters well to avoid greasy texture.
