  • 20 ounces cream of chicken soup
  • 1 packet onion soup mix

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking dish with non-stick cooking spray to prevent sticking.
  2. Combine rice ingredients: In a large bowl, mix together the uncooked long grain white rice, water, cream of chicken soup, and the entire packet of onion soup mix. Stir thoroughly until all ingredients are well combined.
  3. Assemble casserole: Pour the rice mixture evenly into the prepared baking dish. Lay the chicken tenderloins evenly over the top of the rice mixture.
  4. Bake covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 60 minutes. About halfway through cooking, carefully remove the casserole and stir the rice mixture gently to ensure even cooking, then re-cover and return to the oven.
  5. Add cheese topping: After 60 minutes, remove the foil and sprinkle the grated Gruyere cheese evenly over the top of the casserole. Cover again with foil and bake for an additional 15 minutes, or until the rice is fully tender and the cheese has melted.
  6. Garnish and serve: Remove the casserole from the oven, sprinkle the dish with parsley for a fresh finishing touch, and serve warm.

Notes

  • Make sure to stir the casserole halfway through the 60-minute baking time to prevent the rice on the edges from drying out and to promote even cooking.
  • If Gruyere cheese is unavailable, Swiss or mozzarella cheese can be used as a substitute.
