  • 45g (3 tbsp) unsalted butter
  • 30g (2 tbsp) extra unsalted butter for drizzling (optional)

Instructions

  1. Prepare the Fish Seasoning: Combine all seasoning ingredients in a bowl and mix well. Store in an airtight container; the blend will keep fresh for months. This amount is sufficient for 750g (1.5lb) of fish.
  2. Season the Fish: Sprinkle the seasoning mix evenly over both sides of the fish fillets and lightly rub to ensure even coverage.
  3. Cook the First Batch of Fish: Heat 30g (2 tbsp) of unsalted butter in a large non-stick skillet over medium-high heat. Cook the fish fillets in batches until golden brown on each side; cooking times vary depending on thickness but generally about 3-4 minutes per side. Remove cooked fish to a plate.
  4. Cook the Remaining Fish: Melt the remaining 15g (1 tbsp) butter in the skillet and cook the remaining fish fillets using the same method.
  5. Rest the Fish: Allow the cooked fish to rest on the plate for 3 minutes to redistribute juices and finish cooking gently.
  6. Make the Optional Butter Sauce: Place the 30g (2 tbsp) extra unsalted butter in the skillet over medium heat and melt until foaming. Drizzle this flavorful butter sauce over the fish before serving for extra richness.
