Instructions

  1. Preheat & Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil to prevent sticking.
  2. Season the Chicken & Vegetables: In a large bowl, combine the bite-sized chicken pieces, sliced zucchinis, halved cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle with olive oil, then sprinkle the dried oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss everything thoroughly to ensure an even coating of the spices and oil.
  3. Assemble the Bake: Transfer the seasoned chicken and vegetable mixture into the prepared baking dish, spreading it out evenly. Sprinkle the shredded mozzarella and grated Parmesan cheese uniformly over the top.
