  • 2 pounds ground chicken

Firecracker Sauce

  • 2/3 cup light brown sugar
  • 1/2 cup orange juice
  • 2 tablespoon sriracha
  • 1/4 cup rice wine vinegar
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup green onions (sliced)

Instructions

  1. Prepare the Firecracker Sauce: In a medium bowl, whisk together the light brown sugar, orange juice, sriracha, rice wine vinegar, and crushed red pepper until well combined. Set this sauce mixture aside to be used later.
  2. Make the Meatball Mixture: In a large bowl, combine the ground chicken, panko bread crumbs, egg, soy sauce, finely chopped or grated onion, minced cilantro, finely chopped jalapeño, pressed garlic, and minced ginger. Use your hands to thoroughly mix all ingredients until evenly distributed throughout the mixture.
  3. Form Meatballs: Roll the mixture into 1.5-inch meatballs, making sure they are uniform in size to ensure even cooking.
  4. Brown the Meatballs: Heat a large pan over medium heat and add the tablespoon of sesame oil. Once the oil is hot, add the meatballs carefully and cook them for 1 to 2 minutes on each side until they develop a golden-brown crust.
