Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain the pasta, reserving about 1/4 cup of the pasta water, and set aside.
  2. Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  3. Add Pumpkin and Cream: Lower the heat slightly and add the pumpkin purée, stirring to combine. Pour in the heavy cream or half-and-half and mix well.
  4. Season the Sauce: Stir in the grated Parmesan cheese, ground nutmeg, and red pepper flakes if using. Season the sauce with salt and black pepper to taste. Let the sauce simmer gently, stirring occasionally, until it thickens, about 5-7 minutes.
  5. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the pumpkin sauce. Toss to coat evenly, adding reserved pasta water a little at a time if needed to loosen the sauce and achieve a creamy consistency. Heat through for 1-2 minutes.
  6. Garnish and Serve: Remove from heat and garnish with chopped fresh sage or parsley. Serve immediately while warm and enjoy your creamy pumpkin pasta!
