Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste

Sauce

  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter

Garnish

  • Fresh basil or parsley, for garnish

Instructions

  1. Season the chicken: Season the chicken breasts evenly on both sides with salt and pepper to enhance the flavor.
  2. Make the sauce: In a bowl, whisk together chicken broth, heavy cream, grated Parmesan cheese, minced garlic, dried oregano, dried thyme, and red pepper flakes (if using) until well combined.
  3. Assemble in crockpot: Place the seasoned chicken breasts into the crockpot in a single layer. Pour the prepared sauce evenly over the chicken.
  4. Add sun-dried tomatoes: Sprinkle the chopped sun-dried tomatoes over the top of the chicken and sauce for added flavor and texture.
  5. Cook the chicken: Cover and cook on LOW for 4 hours or on HIGH for 2 hours until the chicken is tender and fully cooked through.
  6. Finish with butter: About 30 minutes before the cooking time ends, add the butter to the crockpot and gently stir it into the sauce to melt and enrich the dish.
  7. Garnish and serve: Before serving, garnish with freshly chopped basil or parsley. Serve the Marry Me Chicken with your choice of rice, pasta, or crusty bread to enjoy the flavorful sauce.

Notes

  • For best results, use boneless skinless chicken breasts of similar size to ensure even cooking.
  • If you prefer a thicker sauce, you can remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
  • Sun-dried tomatoes packed in oil add the best flavor, but if using dry-packed sun-dried tomatoes, rehydrate them in warm water before chopping.
  • This recipe can be doubled to serve a larger group, but ensure your crockpot is large enough to accommodate the extra ingredients.
  • Leftovers store well in an airtight container in the refrigerator for up to 3 days.
  • For a dairy-free version, substitute heavy cream with full-fat coconut milk and use a vegan Parmesan alternative.
