Instructions

  1. Add ingredients to slow cooker: Place the chicken, sliced carrots, sliced celery, minced garlic, salt, black pepper, poultry seasoning, and bay leaves into a 6-quart slow cooker. Pour in the 6 cups of chicken broth to cover all ingredients.
  2. Cook the soup: Cover the slow cooker and cook on LOW heat setting for 6 to 8 hours or on HIGH for 3 to 4 hours, allowing the flavors to meld and the chicken to become tender.
  3. Shred chicken and prepare to add orzo: Approximately 30 minutes before serving, remove and discard the bay leaves. Take the chicken out of the slow cooker and shred it using two forks.
  4. Add lemon, orzo, and shredded chicken: Stir in the lemon zest, freshly squeezed lemon juice, uncooked orzo, and shredded chicken back into the slow cooker. Set the slow cooker to HIGH and cook for an additional 20 to 30 minutes, stirring occasionally to prevent the orzo from sticking to the bottom of the pot.
