Ingredients

Scale

Soup Base

  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (14.5 oz) can crushed tomatoes

Creamy Finish

  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)

Garnish and Seasoning

  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Place chicken in crock pot: Put the raw boneless, skinless chicken breasts or thighs in the bottom of your crock pot as the base of your soup.
  2. Add aromatics and seasonings: Add the finely chopped onion, minced garlic, Italian seasoning, and crushed red pepper flakes (if using) on top of the chicken, then pour in the crushed tomatoes for rich tomato flavor.
  3. Pour in broth: Pour the low-sodium chicken broth over the other ingredients to provide the soup foundation and help everything cook evenly.
  4. Cook low and slow: Cover the crock pot and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender and cooked through.
  5. Shred chicken: Remove the cooked chicken from the crock pot and shred it with two forks, then return the shredded chicken to the crock pot for a uniform texture.
  6. Mix in cream: Stir in the heavy cream to add a rich, velvety texture and creamy flavor to the soup base.
  7. Thicken soup (optional): If you prefer a thicker soup, mix the cornstarch with cold water to make a slurry, then add it to the crock pot and stir well.
  8. Add Parmesan cheese: Gradually add the freshly grated Parmesan cheese to the soup, stirring constantly until fully melted and incorporated for a cheesy depth.
  9. Simmer uncovered: Cook the soup uncovered on low for an additional 20–30 minutes to allow flavors to meld and to slightly thicken the soup.
  10. Season and garnish: Taste and adjust salt and pepper as needed, then garnish with freshly chopped parsley before serving for a fresh, colorful finish.

Notes

  • You can substitute chicken thighs for breasts if you prefer darker meat with more flavor.
  • If you want a spicier kick, increase the crushed red pepper flakes or add a dash of hot sauce.
  • For a lighter version, swap heavy cream with half-and-half or whole milk, though the soup will be less rich.
  • The cornstarch slurry helps thicken the soup but can be omitted if a thinner broth is desired.
  • Serve with crusty bread or over cooked pasta for a more filling meal.
