Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: 1 egg, beaten (for egg wash)

For the Garlic Mayo

  • 1 cup mayonnaise
  • 3 cloves fresh garlic, minced
  • 2 tbsp lemon juice

For Assembly

  • Soft buns

Instructions

  1. Preheat and Season: Preheat your oven to 400°F (200°C). Season the chicken breasts evenly with salt and pepper on both sides.
  2. Prepare Dredging Stations: In one bowl, combine the all-purpose flour and garlic powder. In another bowl, place the panko breadcrumbs. If using, prepare a third bowl with beaten egg as an egg wash to help the coating stick better.
  3. Coat the Chicken: Lightly dredge each chicken breast in the flour mixture, then dip it into the egg wash if using. Finally, roll the chicken thoroughly in the panko breadcrumbs ensuring a full coating for a crispy texture.
  4. Bake the Chicken: Lay the coated chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and cooked through, with an internal temperature of 165°F (74°C).
  5. Prepare Garlic Mayo: While the chicken is baking, whisk together mayonnaise, minced garlic, and lemon juice in a small bowl. Refrigerate until ready to use.
  6. Assemble the Sandwich: Once the chicken breasts have slightly cooled, place each piece onto a soft bun. Generously spread the garlic mayo on the top and bottom buns. Add any additional desired toppings such as lettuce, tomato, or pickles, then close and serve immediately.

Notes

  • For an extra crispy coating, use the optional egg wash step between flour and panko.
  • You can add fresh lettuce, tomato slices, or pickles to enhance the sandwich.
  • Make sure to check the chicken’s internal temperature to ensure it is fully cooked.
  • Leftover garlic mayo can be stored in an airtight container in the refrigerator for up to 3 days.
  • To keep buns from getting soggy, toast them lightly before assembly.
