Ingredients

Scale

Vegetables

  • 2 medium zucchinis, sliced into 1/4-inch rounds

Seasonings & Cheese

  • 2 tablespoons olive oil
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Optional Garnish

  • Chopped parsley
  • Lemon zest
  • Red pepper flakes

Instructions

  1. Preheat and Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly coat with olive oil to prevent sticking. Rinse the zucchinis and slice them into 1/4-inch thick rounds. Pat the slices dry using paper towels to remove excess moisture, ensuring the parmesan adheres well and helps achieve a crispy texture.
  2. Season and Toss: Place zucchini slices in a large mixing bowl. Drizzle with olive oil and sprinkle the garlic powder, Italian seasoning, sea salt, and black pepper. Toss to coat evenly. Add most of the grated parmesan cheese, reserving 2 to 3 tablespoons, then gently toss again so the cheese sticks to the slices, building a flavorful, cheesy coating.
  3. Arrange on Baking Sheet: Spread the seasoned zucchini slices in a single layer on the prepared baking sheet, making sure slices do not overlap for even roasting. Sprinkle the reserved parmesan cheese evenly over the tops to create a golden, crispy crust when baked.
  4. Bake to Crispy Perfection: Bake in the preheated oven for 18 to 22 minutes. Halfway through baking, flip each slice carefully to ensure both sides become golden brown and crispy. The dish is done when the cheese is browned and the edges of the zucchini curl slightly.
  5. Garnish and Serve: Remove from the oven and allow to cool for a minute or two. Garnish with chopped parsley, lemon zest, or a sprinkle of red pepper flakes for added flavor and a touch of heat. Serve immediately while hot and crispy.

Notes

  • For best results, slice zucchinis evenly to ensure uniform cooking.
  • Patting the zucchini dry is essential to get a crispy topping rather than soggy slices.
  • You can substitute parmesan with pecorino romano for a sharper taste.
  • Store leftovers in an airtight container and reheat in the oven to retain crispiness.
  • This recipe can be doubled or tripled easily for larger groups.
